Ingredients
Makes 12 burritos
For the Creamy Jalapeño Sauce:
- ¼ cup sour cream
- ¼ cup mayonnaise
- 2 tbsp pickled jalapeños, diced (optional)
- 2 tbsp pickled jalapeño juice (optional)
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp chipotle chili powder (or regular chili powder)
For the Burritos:
- 12 flour tortillas
- 1 (16 oz) can refried beans
- 1½ cups Spanish rice (from a boxed mix or homemade – makes about 3 cups cooked)
- 1½ cups Mexican cheese blend, shredded
How to Make It
1. Make the Sauce
In a small bowl, combine all the ingredients for the creamy jalapeño sauce. Stir well and set aside. This can be made ahead and kept in the fridge for up to 3 days.
2. Warm the Tortillas
Heat a dry skillet over medium heat. Warm each tortilla for 15–20 seconds per side until soft and easy to roll.
3. Fill the Burritos
Spread about 2 tablespoons of refried beans down the center of each tortilla. Add a generous spoonful of Spanish rice and a sprinkle of shredded cheese.
4. Add the Sauce
Drizzle ½ tablespoon of the creamy jalapeño sauce over the filling (or more if you love sauce!).
5. Roll Them Up
Roll each tortilla into a burrito, folding in the sides and leaving one end open if you prefer. Repeat with all remaining ingredients.
6. Serve or Store
Serve warm, or wrap in foil to store for later.
