Ingredients

Serves 4

For the Steak:

  • 1 lb (450g) flank steak or sirloin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp dried oregano
  • Salt and pepper, to taste

For the Bowls:

  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ small red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and halved
  • ½ cup feta cheese, crumbled (optional)
  • ¼ cup fresh parsley, chopped

For the Dressing:

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp dijon mustard
  • ½ tsp oregano
  • Salt and pepper, to taste

How to Make It

1. Season the Steak
Rub the steak with olive oil, garlic powder, paprika, oregano, salt, and pepper. Let it rest for 10–15 minutes.

2. Cook the Steak
Heat a skillet or grill pan over medium-high heat. Cook the steak for 3–4 minutes per side for medium doneness. Let it rest for 5 minutes, then slice thinly against the grain.

3. Prep the Dressing
Whisk together olive oil, lemon juice, garlic, mustard, oregano, salt, and pepper in a small bowl. Set aside.

4. Assemble the Bowls
Divide the rice between four bowls. Top with tomatoes, cucumber, red onion, olives, and feta. Add sliced steak on top and drizzle with the dressing. Sprinkle with chopped parsley.
